RECIPE: WATERMELON, ORANGE and FETA SALAD



It's that time of the year when you start reaching for cold fruit juices, ice cubes and the remote to the air conditioner. When the mercury approaches the red line, the hot season favorites will be a hit around the pool, out on the patio or under a beach umbrella.

Choosing healthy foods and taking in fewer calories than you burn is the secret to a healthy life. The best foods in summer are light and refreshing as opposed to high calorie dishes which seem less appealing.

With the mercury rising, it is time to make the most of fresh, seasonal ingredients. Be it lazy weekend lunches or an evening gathering, salads are a summer favorite for the whole family. So you can be creative and make your own super tasty salads with ease. With seasoning blends to entice taste buds, water-based fruits and vegetables are easy to digest and are recommended for the summer.

So, here is a super easy summer salad recipe by California Pizza Kitchen’s Head Chef, Bakul Kodikal

Ingredients:

Mixed lettuce (cos, ice burg) 150 gm                                                            
Watermelon cubes 100 gm
Sliced black olives 30 gm
Grilled chicken (diced) 90 gm                                         
Orange zest 3 gm
Orange segment 5-6 no
Feta cheese 30 gm
Hand torn parsley 5 gm
Orange yoghurt dressing 90 ml

Method:
·         Take mix lettuce, diced watermelon, sliced black olives, diced chicken and orange zest in a mixing bowl
·         Pour the orange yoghurt dressing all around and toss gently.
·         Arrange on a platter with the watermelon, chicken and olives visible on top
·         Arrange the orange segments over the salad
·         Garnish with crumbled feta cheese and parsley and serve immediately
