Bowled Over!

Known for its wholesome appeal and colourful components, the meal-in-one bowl is fast becoming one of the hottest international food trends—from its savoury to sweet avatars. Smart Life brings you a few such bowls from across the country.

Almost instantly spelling out the words ‘Comfort Food’ in big, bold alphabets, the one bowl meal has a certain easy-going, pretence-free vibe about it and one that has achieved popularity and hipster-chic credence over the last couple of years. Not only are they a convenient and clever way to mix all of your favourite ingredients together, but for whatever reason food just seems more interesting when served from a bowl!
Be it an Asian-style Buddha bowl, a Korean bibimbap-influenced bowl or a fruit and oats-laden breakfast bowl topped with the very fashionable and au courant sliced avocado and chia seeds, the bowl meal is here to stay.
We’ve compiled a list of a few such bowls here in India that have left us, well…bowled over with their brilliance.

Hot Pot Bowl
At Pra Pra Prank, Gurugram
A hot pot is a classic Mongolian rice dish that is served with various vegetable and meat toppings which come sizzling hot in a stone pot. One gets fantastically browned brunt rice at the bottom of the pot, making this dish extra delicious. In this version of the one bowl meal, wok tossed Schezwan-sauced rice is topped with chicken, water chestnuts, roasted peanuts, sweet corn kernels, chives, mushrooms and fried garlic. What makes this dish even more special is that it gives the diner the unique experience of eating from a sizzling stone bowl into which all the ingredients are mixed in front of them. “I came up with this idea because when we were preparing for our new menu, winter was approaching. And so, I thought that I should present my guests with a memorable experience,” says Chef Aryav, the Executive Chef at Pra Pra Prank. “And I thought that there can be nothing better than a sizzling hot meat and rice dish which stays hot till the last bite!”

Morning Glory Bowl and Tokyo Pork Bowl
At Shibuii, Mumbai
Offering two distinct bowls—one vegetarian and one pork-based—this new Pan-Asian restaurant champions this food trend. To begin with, the morning glory bowl is composed of a serving of morning glory leaves tossed in garlic and chilly and then bathed in yellow bean sauce. This is complimented with steamed aromatic jasmine rice. To complete the meal, the bowl also consists of delicately hand rolled vegetable spring rolls drizzled with a tangy hoisin sauce, which gives the meal that extra something. To add to it, the bowl also includes some starch in the form of finger potatoes in a sweet and spicy sauce.
On the other hand, the Tokyo pork bowl is made up of delicious and succulent chargrilled pork belly slices glazed in a spiced curry broth made with the stock of pork, herbs and vegetables. All this is perfectly paired with steamed jasmine rice with prawn crackers and a hand-rolled spring roll adding some crunch to your meal-in-one bowl.

Chilli Tossed Tuna Poké Bowl
At Toast & Tonic  Bengaluru
Generally, this Hawaiian-origin one bowl wonder is a delicious concoction where soy- and sesame oil-marinated raw tuna cubes are served atop vinegared sushi rice. Predominantly a lunch dish, poké (pronounced poh-kay) has taken over the world as a healthy, highly nutritious and fun way to eat fish and rice. Dishing out one of the yummiest iterations of the dish in India we’ve had the pleasure of eating, Toast & Tonic in Bengaluru’s Ashok Nagar does things a little differently with their Chilli Tossed Tuna Poké Bowl. Here the traditional sushi rice is substituted for the short-grained and sticky Gobindobhog variety from Bengal, with the bowl topped off with a passion fruit and pineapple vinaigrette, a halved, beetroot-pickled boiled egg and fresh avocado cubes. All of this is then sprinkled with micro mustard greens, shards of nori (dried Japanese seaweed), fried onions and a sprinkling of the very fashionable chia seeds.

Hot Stone Bowl
At Molecule Air Bar, New Delhi
Drawing in great inspiration from the classic Korean dish called bibimbap, the super colourful hot stone bowl served here consists of warm jasmine rice accompanied by various ingredients like water chestnuts, broccoli, peanuts, sprouts, tofu, spring onion, peppers, chicken, with a fried egg sitting atop it. One also gets to choose a sauce of your liking. Here all the ingredients are mixed in a heated stone bowl in front of the guest at their table and served piping hot. “This dish has very warm flavours which are just right for the winter season,” says Mohammed Anas Qureshi, the Brand Chef. “And as it is served in a hot bowl, the dish stays warm for a longer period of time. The whole idea of this dish is to serve our guest something which brings warmth to their dining experience this season.”

Kiwi Banana Smoothie Bowl
At The Daily Bar & Kitchen, Mumbai
We’ve truly saved the ‘sweetest’ bowl on this list for last with the fruity, all-day breakfast treat that is the yummy kiwi banana smoothie bowl at Mumbai’s The Daily Bar & Kitchen. This bowl is made by blending fresh kiwis and chopped bananas with yogurt that is perfect for people following a healthy diet. Coconut powder is incorporated into this mixture for added flavour, post which it is kept in the refrigerator to chill for a couple of hours. The dish is then served in a bowl and topped with slices of both fruits, delicious toasted granola and some chia seeds to add the right amount of texture. “Banana and Kiwi are my favourite fruits and I usually choose these when I am on the go. Being my staples, I decided to incorporate these two in a smoothie bowl allowing my breakfasts to be super healthy and easy to make,” says Liton Bhakta, Head Chef, The Daily Bar & Kitchen. “Since it worked so well, I decided to add this to The Daily’s menu and ever since it has been the most ordered smoothie bowl!”

Unusual Summer Sips


This summer, why not cool down with these refreshing alcohol-free heat busters that have as their main ingredients a few unusual suspects? From dill and hibiscus to rhubarb and rooibos tea…take your pick!

Rhubarb in…
Rhubarbie Doll
Never mind the rather corny pun in its name, this summer drink celebrates a very unusual ingredient like rhubarb with great enthusiasm. Generally used in the west to make jams and dessert sauces, in this mocktail, the tart rhizome is first made into a pulp. A simple syrup of sugar and water is the base, to which diced rhubarb is added along with white wine vinegar to sharpen the flavour. This rhubarb pulp is then shaken with lemon juice, pineapple and cranberry juices and topped with ginger beer.

Fennel and Dill in…
Fennel and Dill Fizz
Served in highball glass, this blushing pink summer cooler is a built-up drink that is the refreshing sum of its fennel stem, and dill leaf parts. Once muddled together, the fragrant, herbaceous mix is topped up with ginger ale, elder flower and cranberry juice and garnished with a dill frond. The main notes that dominate the drink are of fennel and dill, which are naturally sweet in flavour, herbaceous in aroma and extremely zesty.

Thyme and Rosemary in…
Trend Setter

Reminiscent of one of our favourite Simon and Garfunkle songs—Scarborough Fair—in whose lyrics thyme stands for courage and rosemary, love, this drink is just what one needs to beat the heat! Jasmine tea, maple syrup, pineapple juice, rosemary and thyme are all blended together to form Trend Setter that is served enveloped in a cloud of dry ice smoke. Sprigs of thyme and rosemary complete the look of this tasty, herbaceous drink.

Rooibos Tea in…
Spiced Passion

Calling rooibos a ‘tea’ is actually a misnomer. A type of herb belonging to the Fabaceae family of plants that can be found growing in South Africa, this tummy soothing herb is legendary for its calming properties. Distilling this goodness into an alcohol-free drink for summer are the guys at The Kettlery. The drink is made up of a tangy lemonade base that is flavoured with fresh rosemary, ginger bread and pumpkin tea. This tea is decocted from rooibos and blended with the intense flavours of gingerbread and pumpkin.

Rosemary in…
Summer Fizz
With a pink-peach ombre effect to it, this layered mocktail has fresh pomegranate muddled with a homemade rosemary syrup. It is then topped off with lime juice, chilled green tea, and fizzy soda water. Served in a fluted Hawaiian glass, the drink is garnished with a rosemary sprig, pomegranate seeds and edible flowers. Because, what’s summer without a bit of fresh, herby floral action?

Dried Hibiscus Flowers in…
Hibiscus
Known multifariously as jamaica in Latin America, roselle in South Africa and karkade in the Middle East, the blood red extract of the dried hibiscus flower is the ultimate summer coolant. Displaying its versatility as the main ingredient in this eponymous mocktail, steeped hibiscus tea is combined with a sweet and sour syrup and topped off with soda water. All this, resulting in an all-natural drink that lets the tart taste of the dried flowers shine through.

Hollywood in Your Glass?

Taking India’s love for films to a whole other level are these seven cocktails—each inspired by an iconic Hollywood movie. Each distilling the glamour, wonder and magic of the world of cinema in every drop

Vesper Martini (inspired by Casino Royale, 1967)
This one’s for the James Bond loyalist who likes it, to use the much-bandied about one liner, “shaken, not stirred!” An amalgamation of gin, vodka and the Lillet Blanc brand of French vermouth, garnished with not one, not two, but three olives, Estella’s take on the dirty martini is the perfect ultra-dry drink for a pleasant November evening in Mumbai. “Every man somewhere secretly wants to be James Bond with fast cars, lovely ladies and a life full of passion and adventure. The Vesper Martini is James Bond’s poison as seen in the film Casino Royale. Other than being a huge fan of this classic legendary character, I am personally enamoured by his swag and just had to make room for a clean, mean martini on our cocktail menu. Sherlock in a Pickle (inspired by Sherlock Holmes, 2009 and 2011)
A sour and savoury cocktail, served with a lot of crushed ice, this blood-red cocktail available at London Taxi pays homage to the murder mystery-saturated Sherlock Holmes books and movies. Tea-infused vodka and gherkin brine is the base for this cocktail, as Sherlock was often found either with a cup of tea or a glass of wine (thus the beetroot wine reduction) in his hands. “While curating the London Taxi cocktail menu, the concept was very clear: to draw inspiration from some of the iconic elements of UK pop culture. Sherlock Holmes is the most popular literary character and very, very British and so the ingredients used in this cocktail have been inspired from his story,” explains, Ami Shroff, Head Mixologist, London Taxi.

Willy Wonka (inspired by Charlie and the Chocolate Factory, 2005)
Here’s a
nother cocktail that’s thoroughly inspired by not just an iconic literary character, but also by the film based on that same wacky character—Willy Wonka! This seemingly innocuous blend of whiskey, creme de cacao, dark chocolate, may seem like child’s play, but it packs a mighty punch. “Given the quirkiness of Willy Wonka, and the way they portray chocolate and candy in the movie; this cocktail adds a little tipsy twist to the way we consume chocolate. The idea behind this cocktail was to not only make us feel good with our all-time favourite indulgence—chocolate—but also add a little buzz. The oak-y hint from the whiskey and the creme de cacao helps change the whole composition,” says Pranav Mody, Mixologist, The Sassy Spoon.

Smokin Cosmo (inspired by Sex and the City, 2008 and 2010)
Though we hate to give our cocktails a gender stereotype, this blushing hot pink drink is one for the ladies, just like the fabulous SATC quartet! Go puff, puff on this drink that’s a mix of vodka, Cointreau and lemon juice, all served up in a glass smoking pipe. For, as the name suggests, the Smoking Cosmo is supposed to give the drinker the feeling of smoking a pipe whilst sipping on a classic Cosmopolitan. It gives the traditional Cosmo a fun, quirky twist, making it that much more pleasurable. “To be perfectly honest, the cocktail wasn’t made keeping any specific film in mind. A Cosmo is a classic drink made popular by films like Sex and the City. At Joss, we’ve taken the already sassy drink up a notch and given it our own spin,” says Chef Farrokh Khambata, Proprietor, Joss.

Hawaiian (inspired by Blue Crush, 2002)
The azure waters of Hawaii as depicted in the 2002 surfer flick Blue Crush are the inspiration behind this Tiki-style cocktail that’s a deceptively potent one. It’s also deceptive as the colour is a sunset orange and not a deep blue one would expect. “A Hawaiian cocktail is the ultimate pool-side drink one could wish for. This one’s inspired by the movie Blue Crush which was shot in Hawaii. This cocktail is a perfect balance of vodka, pineapple juice, cardamom and Red Bull, just like how the character of Anne Marie balances her life’s challenges while training for the Hawaii surf event,” says Darren Alvares, Mixologist, Bar Bar.

Moulin Rouge (inspired by Moulin Rouge, 2001)
Baz Luhrmann’s magnum opus Moulin Rouge was a larger-than-life extravaganza that many likened to a Bollywood production thanks to its songs, drama and elaborate sets. This eponymous cocktail seeks to capture the sizzling, passion-filled chemistry that Nicole Kidman and Ewan McGregor shared in the film with its spicy vodka, cinnamon, basil, passionfruit and apple-infused tea parts. “I was inspired by the Moulin Rouge which involves cabaret, a dance form high on music, song, recitation and drama, which I personally think fits in with a place like The Daily Bar and Kitchen,” says Rohit Hegde, Head Mixologist, The Daily Bar and Kitchen.

Churchill Downs (inspired by Secretariat, 2010)
There’s certainly no horsing around this cocktail that’s named after a legendary horse racing track as featured in the 2010 movie Secretariat. Made from a host of ingredients like the banana dominated Dutch liqueur Pisang Ambon, Stolichnaya vodka, charred lemon, wheatgrass, homemade mint and ginger balm syrup, this lurid green cocktail tastes better than it looks! “We recently celebrated one year in the F&B industry and celebrated it over a Kentucky Derby Brunch setting with derby hats, decor and a special set menu around the same theme. The cocktail Churchill Downs is named after the main historic race track at the Kentucky Derby and the cocktail is dedicated to the American thoroughbred racehorse named Secretariat depicted in the movie of the same name,” says the developer of this cocktail, Chef Siddharth Kashyap, The Boston Butt.
